You will get to know how unique structure of the soils (rich in skeleton, poor in organic matter) influences wine profile. After a walk thouth the terraces, you will get introduced to the cellar itself: since 2011, when the winery got a new owner, all processes are certified organic, the vinification occurs in the wooden vats of 50 and 75 hectoliters volume with natural yeasts, after that wine is transfered to large casks of 30 hectoliters volume for aging: Rosso di Montalcino – 2 years and Brunello di Montalcino 4 – years; while Brunello di Montalcino Riserva is aged no less than 5 years in wooden barrels.
