Their wines fully represent the Ventoux AOC through an amazing variety of grapes. They primarily use Syrah, Cinsault, Grenache, Mourvèdre, Grenache Blanc, Clairette, Roussanne, and Viognier. Château Saint Pons winery follows a manual and traditional process for their winemaking. Pruning, de-budding, and harvesting are all done by hand in a green way.

The domain features clay-limestone earth, primarily grey clay. Moreover, all their wines perfectly reflect the characteristics of their terroir. Their red wines have a spicy taste and they feature the notes of sour cherry. On the other hand, their aromatic white wines come with the notes of white fruits.
