Domaine Felix, in the Heart of Burgundy
Domaine Felix resides in Burgundy, the home of exquisite wines and gastronomy, but also the home to the Felix Family winemakers since 1692. The forty hectares of the winery is located 8 km south of Auxerre, and 16 km west of Chablis in Saint Bris. Le Vineux is the ultimate paradise for wine admirers. Since the beginning of the 20th century, the family members from the villages of Saint-Bris and Irancy started Domaine Felix and its wine production. The legacy passed from generation to generation and is now in the hands of Oliver and his parents. The mission of the family is to develop export markets for their wines while maintaing excellent quality by being fully involved in the cultivation of vines and winemaking.
Soils from the Jurassic Period and Their Influence at Domain Felix
The Kimmeridgian clay-limestone subsoil, dating back to the Upper Jurassic period, influence the grapes’s structure, flavors, and maturation cycle. At Domaine Félix, Sauvignon, Aligoté, Chardonnay, Pinot Noir, and Caesar are grown in the vineyards. The family aiims to adapt their actions to the exposures, cellaring, and seasonal temperature fluctuations that change with each harvest year.
The Vinification Process at Domaine Félix
Extreme care and attention to detail are applied at Domaine Félix when picking grapes, sorting, and pressing at low pressure. The delicacy of these processes gives the wine its richness and clean, fruit notes. The wines then experience 18 months of fermentation and maturation in French oak barrels and stainless steel tanks under controlled temperatures. The end result is the culmination of pure, prisitine wines that represent the region in a fantastic way.
