Demeter certified Winery
The Wassmann Winery is located in a picturesque village in Southern Hungary. It is the one and only Demeter-certified biodynamic winery in whole south Hungary. The owners, Susann and Ralf, established this first organic winery in Villány in 1998 and is run by only two of them. They do all the work in the vineyards (a lot of handworks) and also in the cellar personally.
Gault and Millau Hungary counts them among the best wineries in Villány, which is the most important red wine region in Hungary.
Pioneers of Organic Viticulture Creating “Natural Wines”
Their wines are called “natural wines”, which means they use no agents in winemaking, they do not fine, they do not filter and their wines have very little or no sulfur, aiming for the highest quality. There is no technology in the basement except for an old press and a small de-stemmer. The wines are aged in steel or oak tanks.
They have cultivated Kékfrankos (Blaufränkisch), Cabernet Franc, Cabernet Sauvignon, Merlot, and others. As pioneers of organic viticulture, they were the first to implement this type of approach in the region in 2003. In 2012, after experiencing the advantages of chemical-free winemaking, they decide to convert the whole estate to biodynamic.
Wine that are Natural, Vegan and low in sulfur
Their wines reflect the special features of the terroir. The ideal conditions of the countryside provide the perfect location for the cultivation of native Hungarian grape varieties which helps in creating premium quality bio-dynamic wines.
The owners treat their vineyard as a living breathing ecosystem, taking care of the entire flora and fauna, and making sure to maintain the organic balance. They believe that their wines should develop the real personalities created by nature and should avoid the use of chemical manipulation. As a result, nature’s perfection shines through in every bottle.
