Chateau Copsa Winery is nestled in the heart of the Rose Valley, surrounded by the southern slopes of the Balkan Mountains and Sredna Gora. Spanning over 50 hectares, this region is ideal for cultivating premium grape varieties. The winery produces Red Misket, Muscat Ottonel, Chardonnay, and Sauvignon Blanc. Thanks to the cooler climate, the grapes mature later, allowing them to develop the unique characteristics of the terroir.

Every grape used in the winemaking process is hand-picked at dawn to ensure they remain intact and preserve their rich flavors.

Warmest hospitality and an unforgettable experience! For us this is a first class hotel, as my husband and I travel a lot beyond the borders of Bulgaria, and we have a benchmark, as this wonderful hotel is in no way inferior to the top hotels and restaurants. Our stay at Chateau Copsa Hotel for our first anniversary was much more than just a holiday and celebration - it was a real experience that we will remember forever. My husband had asked the staff to prepare a surprise with flowers, balloons and wine for our celebration, which was not mentioned as a favor, but nevertheless they took it to heart and did everything to fulfill this whim. As soon as we arrived we felt how special we were guests. The staff did not just do their duty, but really took care of us with attention, warmth and a genuine smile, which unfortunately is already quite rare in our country. Every person we met was extremely kind, friendly and willing to go out of their way to make us feel wonderful. English: The food was magnificent: each dish was presented with attention to detail and taste that shows a true passion for cooking (I would like to add that the food is homemade and the hotel supports local producers). The wine is the most aromatic I have ever tasted. A lot of love and care was put into creating such an amazing drink. Every little care given to us made our stay not only comfortable but magical. The animals left free to run around (especially the bunnies) contributed to giving even more joy and beautiful emotions. Thanks to the whole team for their dedication, professionalism and above all for making us feel even better than at home. This is a place where hospitality is felt in every detail! I don't even think it's necessary to comment on every single detail of the interior and exterior. Words there are superfluous! And of course I want to add that the staff is young, which made us even more happy, because professionalism comes from experience and years, but here too they proved me wrong. A huge thank you to all the staff and a big BRAVO to the owners! :)

Overall, we were satisfied with our stay at Chateau Copsa, but we were cold. The castle is heated only by electricity, which isn't sufficient in winter. There are no refrigerators in the rooms. Hot water in the evenings was rather lacking. We only had one duvet and one bathrobe in the room, and there were two of us. The cuisine didn't impress us. The wine was wonderful. So was the woman at the reception. Perhaps we would return, but in warmer weather.

A Unique and Spectacular Experience Staying at Hotel Copsa was truly a one-of-a-kind experience. This place feels like something out of a fairytale: a castle-like tower in the middle of nowhere, offering breathtaking views from every angle—whether from the room, the restaurant, or the outdoor spaces. Wherever you look, you’re surrounded by stunning mountain landscapes, made even more magical by the wind sweeping through the valleys. We were incredibly lucky to have the entire hotel almost to ourselves for the whole weekend, which made the stay feel like a private retreat. The service was good, and the overall atmosphere of the hotel is peaceful and unique, perfect for anyone seeking to unwind and escape the usual crowds. The only minor downside was the restaurant, which could improve its preparation quality and service speed. Also, I’m not entirely convinced about the olive oil they used. Still, these are just small details that didn’t affect the overall experience. If you’re looking for a stunning, off-the-grid destination far from mass tourism, Hotel Copsa is the perfect choice. I would happily come back!

We were very impressed with our experience there. There are two restaurants in the hotel area which have impressive kitchens that are open from the restaurant side, i.e. the food is actually prepared in front of your eyes. A second restaurant next to the castle itself which is extremely well done. The ambience gives a nice feeling of coziness and at the same time there is super massive wooden furniture. The presentation of the tasting menus is up to par. The boy who served us was very young but well informed about the variations and combinations of the gourmet dishes. We also availed of a massage - it was very good. The spa has a real sauna so there is room for expansion. We also bought wines from the reception. They are very good and highly recommended. Cheers to the whole team - keep up the good work, I see a lot of potential to make it even more of a draw.
