Chateau Copsa Winery, Founded in 1998

Chateau Copsa Winery is located in the Rose Valley’s heart between the southern slope of the Balkan Mountains and the Sredna Gora. The vineyards extend over 50 hectares, an area that is exceptionally suitable for cultivating high-quality grape varietals. The winery grows Red Misket, Muscat Ottonel, Chardonnay, and Sauvignon Blanc. As a result of the cooler climate in the area, the grapes ripen later, giving them more time to carry the terroir’s unique characteristics.

Each bunch of grapes that are used in the winemaking process is hand-picked at dawn so that they are kept undamaged and to preserve their intense flavors

A Combination of Ancient Techniques and Modern Technology

The extraordinary Chateau Copsa Winery was founded by the Minkov family in 1998, who firmly believe in making high-quality wine and who draw on the winemaking techniques of the ancient Thracians. Today the family uses a combination of ancient techniques and traditions along with modern technology. The family’s underlying ethos is that fine wine is made when grapevines are treated like children – with affection, patience, and dedication.

Winery Entirely Run by the Family

Chateau Copsa is one of few family wine estates where the entire winemaking process is entirely controlled by the family, from picking the grapes to the bottling of the wine. This oversight allows for careful attention to be paid to every step. To enhance this process, the family also has a modern winemaking laboratory in Klisura, a few kilometers away, and the magnificent cellar situated in the stone foundations of the Chateau.
