Founded in 2008 by Marcus Gruze and Uta Slamanig, Weingut Georgium is a small winery located in St. Georgen am Längsee, Carinthia, covering 3 hectares. We believe that respecting nature leads to the highest quality wines. Our focus on biodynamic farming and artisan techniques in both the vineyard and cellar ensures that our wines reflect their true origin. We aim to create authentic, sustainable wines that showcase the unique characteristics of each vintage.
At Weingut Georgium, we specialize in Burgundy grape varietals, including Chardonnay, Pinot Blanc, Pinot Gris, and Pinot Noir. Harvest typically begins in mid-October when the grapes reach physiological ripeness. Our vineyard's soil, composed of crushed rock and schist with calcareous lines, imparts a distinct minerality and subtle saltiness to our wines. The warm, dry summers and the vineyard's unique microclimate contribute to the development of rich aromas, with warm days and cool nights in autumn enhancing flavor complexity.
In our cellar, we prioritize minimal intervention to preserve the wine's natural essence. Our wines undergo spontaneous fermentation, primarily on the skins, and mature for 12 to 48 months before bottling. We avoid additives, fining, and filtration, using only the necessary amount of sulfur. With an annual production of approximately 7,000 bottles, our wines reflect the care and craftsmanship that begins in the vineyard and continues in the cellar.

We were passing through, so it was only quieter for one night. Our lake view room was nice and spacious, as was the bathroom. In the evening we had an excellent meal in the adjacent Mundschenke, where the nice Georgium boss prepared an excellent breakfast for us. However, due to the time of year (October), there wasn't much going on.

Went to the winery for 1 night on Wiesenmarkt Saturday and were completely convinced and started our journey home fully satisfied. Super clean, nice rooms, an amazing organic breakfast and the nicest staff you could wish for! We'll definitely be back!

We stayed at the Georgium for 2 nights and had 3 rooms as a family. Each of them was clean and tastefully decorated. The breakfast was sufficient and fresh. The location on the lake is perfect for excursions. The service was very friendly. We'd love to come back.

A perfect spot for a break at the lake. Hotel decor, rooms, service, comfort and ambience was all chic and elegant. We were upgraded on our second night and we got to savour the plush Burgundy Rot suite for a night. We felt very lucky. The views of the lake are beautiful, especially on a misty September morning. The entrance to the lake is opposite Weingut Georgium. A bus stops outside which comes from and to St Veit an der Glan, and a taxi from town generally cost €30 to the hotel. It was also a €30 taxi ride to visit the castle at Hochosterwitz; great on a rainy Monday We ate dinner at the lovely restaurant and exquisite chef's surprises just kept arriving, featuring venison, stuffed zucchini flower, salmon trout sashimi with buttermilk, crispy-skinned pike fish with apricot and a savoury risotto, succulent lamb cutlets with pumpkin, and a delicious ending of raspberries and chocolate. Truly delicious, interesting food, with a glass of natural wine which always fascinates. The hotel and restaurant absolutely delivered on its promise.
