Winemakers Word:
Three varieties were vinified separately for this pink blend: 85 % Sauvignon Blanc, 9% Grenache Noir and 6 % Viognier Straw Wine.
The goal was to get as much aromatics in the wine, while keeping it light and crisp. This was achieved with cooler fermentations, and gentle handling of the grapes skins with the Grenache.
Viticulture:
The grapes all come from different aspects on the farm, which adds some complexity. The soil is weathered sandstone which accounts for the wines’ minerality. All practices are organic. Yields are between 3-4 tonne per hectare.
