Cantine Sava is a family-run winery on the southern slope of Mount Etna, in Contrada Salùci, Belpasso, CAtania at 750 metres above sea level.
When restoration work began on the old palmento, the stones started telling their own story. Beneath layers of lime, a symbol emerged: a cross carved into the rock, intertwined with the phases of the moon. Archives confirmed what the land had long kept silent: these grounds once produced sacred wine, consecrated for Eucharistic celebrations. Who carved that symbol, and why beside the moon, remains unanswered. Some questions belong to the volcano.
The 1790 palmento and the 1791 catonian press have been restored using their original materials, stone by stone. They are not a museum. They are the living entrance to every visit.
The wines grow from alberello-trained vines rooted in volcanic sand rich in potassium and iron. Three labels, all Etna DOC: Salùci Etna Rosso DOC 2022 and 2023, a 100% Nerello Mascalese aged in Slavonian oak, and Salùci Etna Bianco DOC 2024, a 100% Carricante vinified in steel to capture every mineral note the volcanic soil can give.
Visits take place at weekends in small groups. An AIS-certified sommelier leads the experience: a walk through the vineyards, a descent into the natural lava cave where the wines rest in geological silence, a tour of the historic palmento, and a guided tasting paired with local charcuterie, cheeses, and the estate's own organic Nocellara dell'Etna olive oil.
No buses. No crowds. Just the volcano, the family, and the wine.
