Cantine Sava is a family-run estate rooted in generations of farming on the slopes of Mount Etna. The winery is located in Contrada Salùci, on the lesser-explored southern slope of the volcano, at 750 metres above sea level.
At the heart of the estate stands an 1790 palmento — a historic stone winemaking facility — and an 1791 catonian press, both restored using original materials. During the restoration, a symbol was discovered carved into the stone: a cross entwined with the phases of the moon. Historical research revealed that these lands once produced sacred wine for the local Eucharistic celebrations, linking the winery to a centuries-old spiritual and agricultural tradition.
The wines are grown from alberello-trained vines rooted in volcanic sand rich in potassium and iron. Salùci Etna Rosso DOC is a 100% Nerello Mascalese aged in large Slavonian oak casks. Salùci Etna Bianco DOC is a 100% Carricante, steel-fermented to preserve the volcanic freshness of the terroir.
