Cooking in Emilia-Romagna means one thing: fresh, handmade pasta.

An ancient, everyday gesture, passed down in country homes and preserved for generations.

This fresh pasta making class with a rolling pin is an invitation to enter that domestic and authentic dimension, guided step by step through an experience that combines know-how, storytelling, and the land. 

You'll learn to knead and roll out pasta according to Romagna tradition, preparing tagliatelle all'uso di Romagna and a type of stuffed pasta, accompanied by practical advice, cultural curiosities, and the history of the Villa and its surroundings.

The experience continues with a light lunch, seated in the halls of the 18th-century villa, where you will enjoy:

  • tagliatelle prepared together
  • a traditional appetizer
  • homemade tiramisu

paired with two glasses of Noelia Ricci and Pandolfa organic wines.

Each participant is given a recipe book, so they can take the skills, ingredients, and secrets they've learned home with them and replicate them.
The course and lunch take place in the halls of Villa Pandolfa, a historic and timeless venue.

This wonderful estate was love at first sight and we chose it with our eyes closed for our most beautiful day. Beauty in every corner, hospitality, helpfulness, class, kindness and elegance of the owners and all those who work there were the backdrop to moments that will remain indelible for us. Of no less importance is the quality of the wines and all the company's products with which our guests were delighted, not to be missed!

We chose to treat ourselves to a tasting with a guided tour. We were welcomed with great courtesy by the young Alice, who then accompanied us the entire time, illustrating the cellar, the archive of ancient wines and the part of the villa with public access. He made us sit in a bright living room, serving us excellent quality wines and a delicious lunch. It was truly a wonderful experience, of great beauty and quality. Highly recommended.

A tour and tasting at this beautiful hilltop winery, between the Apennine mountains and the sea, was one of the highlights of a recent small group food and wine tour I hosted in Emilia-Romagna. We visited the vineyards by tractor-drawn cart past orchards and vines until we were at the top of the property with magnificent views. Back at the winery we walked through the ancient tunnel from the production cellar to the grand 18th-century villa for a guided wine tasting with the winemaker. Not just delicious wines (which they are) but wonderful hospitality and a spectacular setting.
