Les Hautes Prières - Champagne Roger-Constant Lemaire

Viticulture

Les Hautes Prières 2011 is produced from 100% Chardonnay, it is a Blanc de Blancs premier cru champagne from Hautvillers vineyard terroir, characterized by charred limestone soil. The mode of cultivation qualifies it for both the High Environmental Value label and the Sustainable Viticulture label.

Vinification

The wine is produced without malolactic fermentation to preserve the high natural acidity of the grapes. The wine was racked late, not until in February, and there was no filtration or fining of the wine.

Ageing

The has been matured in 225L oak barrels for 9 months and aged in bottle since 2012

Aroma and flabour characteristics

On the nose the wine expresses a richness of warm cereals, herbal flowers, toast and roasted notes, along with mocha and cocoa. The long maturation in oak excites the palate with bergamot and ginger notes.
