For a winemaker, indeed, to imagine and to make a wine, starting from 100% organic grapes, result of a hard and meticulous work in the vineyard, all over the year, without any chemicals, with spontaneous fermentations, indigenous yeasts and with very few interventions in cellar, is a constant risk.
On the other hand, it is also the great opportunity to let the taster discover the real character of the Falanghina variety cultivated in the northern Puglia, in an organic way and with minimum intervention wine making style.
So, the name ALEIS (used in the plural) really wants to express the opportunities, but also the uncertainties, linked to the production of a wine completely result of nature itself.
