Lavaux is a wine region in the Swiss canton of Vaud. It is located between Lake Geneva and the Alps and is home to some of the world's most renowned vineyards. The Lavaux vineyard terraces have been listed as a UNESCO World Heritage Site since 2007. It is also known for its close ties with a well-known Swiss watchmaker, Rolex. The Lavaux appellation includes around 800 hectares of vineyards that stretch along the lakeside from Montreux and beyond to just east of Lausanne. Lavaux borders the Villeneuve commune at its easternmost point, as well as the larger Chablais appellation, which denotes the start of the Rhône valley.

While there is some indication that the vines were produced in this region throughout the Roman era, the vine terraces themselves date back to the 11th century, during the administration of the Benedictine and Cistercian monks. The Bernese authorities recognized the significance of the winemaking industry in Lavaux during their rule of the canton of Vaud and helped spread its popularity outside of Switzerland.
The breathtaking landscape of Lavaux was sculpted by the creation of the Alpine range millions of years ago. The Rhone glacier covered Lavaux throughout the ice ages, and its collapse 15,000 years ago created the steep slopes of the vineyard. The region has temperate weather, but the southern orientation of the terraces, the sun's reflection in the lake, and the stone walls give the place a Mediterranean feel. The soil in the Lavaux region is extremely unique, making it an ideal location for wine production. The soil composition is a mixture of clay and limestone. The Chasselas grape is the major wine grape variety cultivated here.
The Lavaux region's chalky-clayey soil makes for distinctive wine and is ideal for producing the Chasselas grape. This widely grown grape variety in the area produces dry white wines that go well with excellent food and as aperitifs.
Other grape varieties cultivated in this region are Pinot Noir and Gamay for producing red wines. Pinot Gris, Pinot Blanc, and Sauvignon Blanc are also cultivated in lower volumes.
The Fondue dish is a melted pot of two or more ingredients that are traditionally served in a fondue pot with bread for dipping. The word 'Fondue' comes from a Swiss-French dialect and means "to dip", "to submerge" or "to melt". Fondue's main ingredient is melted cheese with a variety of regional flavors and tasty ingredients such as cherry brandy, white wine, or nutmeg.
Le Maréchal is an artisanal French cheese from the Swiss canton of Vaud. The cheese is made with unpasteurized cow's milk, and it is matured for at least 130 days. The mouthfeel is rich and creamy behind the herb-rubbed edible rind. It is best served with Lavaux wine made from Chasselas grape.
Papet Vaudois, a delectable hotpot of leeks and potatoes that is boiled together for hours until they attain the consistency of a papette, which is French for mash, has a long history in the canton of Vaud as one of its signature dishes. This dish pairs well with Pinot Noir.

Chillon Castle, also known as Château de Chillon, is a castle on an island in Lake Geneva in the canton of Vaud, south of Veytaux. It is located on the slender shore between Montreux and Villeneuve at the lake's eastern end, providing access to the Rhône Valley's Alpine region. It is one of Switzerland's and Europe's most popular medieval castles.
