Not always does the idea of turning farmland into vineyards is successful. But the idea turned out to be a massive success for them.

Following sustainable principles
Since the beginning, they have been producing wine sustainably as they believe it is the right thing to do for them, their land, their people, community, and business.
At present, 25% of their vineyards are under organic management with the goal to be fully organic by 2025. They own seven vineyards on the Martinborough Terrace.
Palliser winery: wines reflecting the different soils
Though the winery is walking distance away from each other, they all produce quite distinctive wine styles reflecting the differences in soils and microclimates. The grape varieties produced in the seven vineyards are Pinot Noir, Chardonnay, Sauvignon Blanc, Riesling, and Pinot Gris. These varieties are planted as per the soil and microclimates they thrive best in. Palliser makes wines exclusively under the classification Martinborough. Their collection comprises of a range of Red wine, White wine, Rose wine, Sparkling wine, and Dessert wine.
