Vinification

The selection of the grapes is manual and takes place on long sorting levels. By fall, the grapes reach the conical oak vats: without managing temperatures and without adding selected yeasts, the must ends fermentation and remains in maceration on the skins for about a month.

Tasting Notes

The delicate flavor surprises for the enveloping softness, moderate freshness, and a nuanced tannicity which, on the whole, make it pleasantly balanced. The final persistence completes the gustatory picture, which closes on highly appreciated menthol notes.
