World Class Wines from La Cantina Degli Abissi – Bisson Vini
The winery was established in 1978 by Pierluigi Lugano to continue the production of Ligurian wines which had practically disappeared. The unique soil, the climate, grape varieties, the care taken at harvest gives a unique taste and exclusive attributes to their wines reflecting the quality of their terroir. The main types of grapes that grow here are Bianchetta Genovese, Vermentino, Pigato, Cimixa, Ciliegiolo, Granaccia, and Sciacchettra. Only the best goes into the production of their world-class red, white, rose, sparkling, fortified, and dessert wines.
The winery that Gave Rebirth to The Ligurian Wines
In the late ’70s, Pierluigi Lugano saw potential in the sour wine of Ligurian Farmers and decided to try the adventurous journey of winemaking to revive Ligurian Wines. Numerous experiments and techniques were tried to treat local grapes. Finally, excellent results were obtained that made it possible to revive those native Ligurian wines that had practically disappeared, such as “Bianchetta Genovese” and “Ciliegiolo”. The findings of Ligurian wines also helped generate new insights such as “Musaico”, a strong red wine personality. After producing such wines with purchased grapes for a few years, Lugano decided to plant vineyards in order to fully control the quality of its wines.
History of Their Wines
They start the winemaking process with early harvest and preparation of the base wine with sparkling technique, lifting off the cap of grape pomace. Fermented at a controlled temperature, drawing of the yeasts is done. After the selection and putting it in the stainless steel container, it is kept at a depth of 60meters at a constant temperature of 15 degrees for eighteen months. Only the best batch will undergo the further process. Their wines have a full straw yellow color, fine and persistent, intense aroma with a large bouquet that ranges from the salty and musky, dry taste long and strong minerality.
