Founded in 1978 by Pierluigi Lugano, La Cantina Degli Abissi is dedicated to reviving the rich tradition of Ligurian wines that had nearly vanished. The winery benefits from unique soil, a favorable climate, and carefully selected grape varieties, resulting in wines that truly reflect the quality of their terroir. Key grape varieties include Bianchetta Genovese, Vermentino, Pigato, Cimixa, Ciliegiolo, Granaccia, and Sciacchetrà. Each wine—whether red, white, rosé, sparkling, fortified, or dessert—showcases the exceptional quality of the grapes and the meticulous care taken during harvest.

A Renaissance of Ligurian Wines

In the late 1970s, Pierluigi Lugano recognized the untapped potential of Ligurian grapes and embarked on a mission to revive local winemaking. Through numerous experiments, he successfully transformed the region's lesser-known grapes into celebrated wines, including the Bianchetta Genovese and Ciliegiolo. His innovative approach also led to the creation of "Musaico," a robust red wine that captures the essence of Liguria. After several years of sourcing grapes, Lugano established his own vineyards to ensure complete control over the quality of his wines.

The Winemaking Process

The winemaking process at Bisson Vini begins with an early harvest, followed by the careful preparation of base wines using traditional sparkling techniques. Fermentation occurs at controlled temperatures, and the yeast is meticulously managed. The wine is then stored in stainless steel containers at a depth of 60 meters, maintaining a constant temperature of 15 degrees Celsius for eighteen months. Only the finest batches proceed to the next stages of production. The resulting wines exhibit a vibrant straw-yellow color, a persistent aroma, and a complex bouquet that combines salty and musky notes with a long, mineral-driven finish.
