A Gourmet Experience Unlike Any Other in the Region

BioSing, a small artisanal charcuterie producer from Ribnica valley in Slovenia, a region known for its centuries old tradition of craftsmanship. At BioSing, this tradition continues in a different form. Instead of working with wood, our founder David Lesar works with meat.

BioSing focuses on dry cured sausages and salamis of the highest quality, made without any additives, relying on time, long aging, and natural fermentation. Our products are created to express purity of flavor and are intended to be paired with outstanding wines.

Over the years, BioSing has also built an exceptional wine collection from some of the world’s most important wine regions. The collection currently counts around 15,000 bottles and includes wines from Slovenia, Bordeaux, Burgundy, Champagne, Italy and other renowned terroirs. Great attention is dedicated to rare vintages, artisanal producers and wines with strong identity and character, creating a natural dialogue between fine wine and BioSing charcuterie.

What sets BioSing apart is not only the product itself, but the overall approach. From sensory depth and philosophy to storytelling and presentation, our charcuterie is created outside of industrial standards. For this reason, BioSing products are not available in conventional retail or mass distribution, but exclusively through selected high end gourmet locations.

BioSing has become the only dry cured salami from Slovenia represented at some of the most demanding gourmet destinations in Europe.

We visited Biosing in early October as a change to a small group food tour of Slovenia and what an amazing addition to the trip. The tour, explanation of how the sausage and salami are produced, the tasting and the wine flight were all amazing. I am not overly keen on salami, but this was on a different level - a Michelin Star experience. If you are in Slovenia, you must look Biosing up and visit

Am amazing experience. David who owns and make the salamis is a magician!!! We loved the tour of his cellar and salami coolers. The wine and tasting of David's salamis afterwards was exceptional. A wonderful morning with 6 of my friends organised by the fabulous Jure from Slovenian Adventure Tours.

A truly unique experience at BioSing. Led by David, the owner, we had the opportunity to learn more about his work and sample his outstanding products. The salami and sausages are free of preservatives and additives, and the passion and care that goes into their production guarantee truly exceptional products. You simply have to try them yourself to appreciate their delicious flavor. The wine cellar and wine pairings are also fantastic. I highly recommend the bear goulash: simply delicious!
