Situated just 30 kilometers from the Mediterranean Sea, the vineyards benefit from a unique continental climate that is ideal for growing grapes. The primary grape varieties cultivated here include Vermentino, Syrah, and Grenache, which are used to produce exquisite white and renowned rosé wines. Grenache and Syrah account for 50% of the vineyard's plantings, thriving in the soil that best suits their growth. In recognition of its commitment to sustainable practices, Château Gassier received Organic Agriculture Certification in 2016.

Since the Jeanjean and Gassier families acquired the estate in 2004, they have focused on maintaining the high quality of their wines. With the guidance of Olivier Souvelain, the vineyards and cellar have undergone significant improvements. Château Gassier also features the Sentier des Vignes, an educational wine trail that highlights the biodiversity and unique wines of the Saint-Victoire region.
