In 2017, Adrien Pélissié and Julien Brustis , winemakers trained in the Gironde region, returned their vineyard to the Plaine de Versailles. One hundred and fifty years after the phylloxera epidemic , the vines have returned to Davron , to the land that once supplied the royal table.
The Bouche du Roi estate now comprises twenty-seven hectares in a single block, cultivated organically since the first planting. Six grape varieties make up the planting, chosen for the limestone soil of the Versailles Plain: Chenin, Chardonnay and Sauvignon for white wines; Merlot, Cabernet Franc and Pinot Noir for red wines.
The name of the estate is a tribute. At the court of Versailles, La Bouche du Roi designated the department of the King's Household in charge of wines and food: sommeliers, cupbearers and cooks, guarantors of what was served to the King.
It was the supreme arbiter of French taste, where the most admired table in Europe was prepared each day. By adopting this name, the estate reclaims its heritage and gives voice to a culinary art that Versailles had brought to its zenith.
