Organic Winemaking Methods at Ronco Calino
Ronco Calino practices organic farming in his winery, valuing the natural balance of the ecosystem. The organic vineyards are extended over an area of 13 hectares and the owner grows a vast array of grape varities: high-class Chardonnay, Pinot Noir and unique native Erbamat, along with fruity Cabernet Franc, Cabernet Sauvignon, and Merlot. After the harvest, the manually picked bunches are immediately chilled to keep the aromas intact, then gently pressed and stored in steel tanks and wooden barrels. Paolo Radici produces 70,000 bottles of award-winning sparkling wines under the Franciacorta DOCG status and 2,000 bottles of delicious red and white wines.
At the Winery the Wines Mature for a Long Time
Surrounded by the charming vineyards, the wine cellars of Ronco Calino are located on the borderline of the mesmerizing villages of Adro, Erbusco, and Cazzago San Martino. The cellars at the winery are equipped with modern technology, such as chillers, pressers, small tanks and wooden barrels to assist all the wine production stages. Paolo Radici ages his wines at Ronco Calino on the lees for 12 months more than what is required by the rigorous production code to enhance their tastes and aromas. In 2019, Ronco Calino established a new wine tasting room, overlooking the lush landscapes and furnished with giant chandeliers and hanging sofas to welcome the wine lovers.
