The Story Behind Seven Generations Winery

In 1878, a young man named Ilia Rabchev left his village of Byala Cherkva, Bulgaria, to study winemaking in France. Upon his return four years later, he founded Rabchev Cellars, which quickly became the leading winery in the region, exporting wines and spirits to Germany. In 1968, Lyuben Rabchev, the fifth-generation winemaker, immigrated to the USA, where he achieved his American dream as a successful businessman. After 40 years, he returned to his roots and established Seven Generations Winery, continuing the family legacy with his children as the sixth generation and his grandchildren as the seventh.

The Vineyards of Seven Generations Winery

Located in North-East Bulgaria, on the outskirts of Mechka, Seven Generations Winery is surrounded by picturesque rolling hills. The region boasts an ideal terroir for cultivating three primary grape varieties: Cabernet Sauvignon, Cabernet Franc, and Merlot. These grapes are used to create exquisite red wines and rosés. The vineyards are meticulously cared for, ensuring high-quality wines in limited editions. Each wine is aged in French oak barrels, separated by grape variety to enhance its unique characteristics. A perfect place to relax. Wonderful view, comfortable and well-equipped room with beautiful mattresses and bedding, good food and wine, extremely friendly staff: reception, restaurant, kitchen, maintenance... Unbeatable value for money.

I recently stayed at this 3-star hotel, and while the experience had some positive aspects, it also raised a few concerns. My arrival was a bit complicated, as I had made a request through the website on the day of my reservation, but I did not receive a response. However, upon arrival, I was greeted by a friendly and kind receptionist who informed me of a promotion. Instead of paying 120 BGN, I only paid 100 BGN per night (approximately 51.78 Euros, which was due to my traveling alone), and I considered this an excellent deal. It is important to note that the prices are standard throughout the year, which is unusual and reflects a lack of management at the hotel. The more economical rooms are located outside the main building, where the restaurant and spa and gym facilities are. Although the setting is beautiful, soundproofing is an issue. Music from the restaurant is clearly heard from the rooms and garden, interfering with the peace and tranquility one expects in such a place. Additionally, there are constant plumbing noises, and if the neighbors are noisy, privacy is compromised. The hotel is in a spectacular location and has great potential, but it needs better management. The room rate includes access to the gym and spa; however, when I visited, only the saunas were available, as the jacuzzi was out of service. I dined at the restaurant, starting with pâté and bread, followed by fish and cold potato salad, all accompanied by a glass of wine. However, I was surprised when the waiter asked if I wanted ice in my wine and suggested a Moscato wine to pair with the fish, which is inappropriate since that grape is typically used for dessert wines. Despite this, the staff was very nice. It would be helpful to have a wine list in the room with prices, as they were not available at the reception, and only the prices of the minibar bottles were indicated. The room includes bathrobes, a hairdryer, and complimentary water, which aligns with the hotel’s category. Breakfast is served from 8:30 to 10:30, which I think is a bit late; I would recommend starting it at 8:00. Despite some management inconveniences, I would return to this hotel. The sunsets offered are spectacular, and being able to enjoy them with a glass of wine while reading is a true pleasure. The bed was very comfortable, and after 1:00 a.m., one could rest peacefully. The hotel also has a pool, bicycles for rent, and electric cars, although I did not use them during my stay. Additionally, they organize events and weddings, which could be problematic in terms of noise if there are parties during your stay.

This is our second year visiting you and we are very satisfied and grateful for the whole experience. The rooms are clean with lovely bedding and cosy furniture, not to mention a lovely view. The restaurant menu is very varied and everything we tried was delicious. Homemade pate, dip with basil, carp, catfish, salads, appetizers, in short, we ate a lot in 3 days and liked everything. All the staff are very friendly and responsive. We were late with the request for the dinner with wine, but they still did their best to organize it for us! Good wine, good people and good food, what more does a person need...? Thank you for the warm welcome, we hope to see you again!

Although for one night we felt like we were actually sleeping to rest and relax. The atmosphere was very pleasant, quiet, and there was no unnecessary noise. The view, especially at night, was intoxicating; it was so beautiful... we enjoyed it. Most importantly, we were able to get some fresh air and rest, even if it was only for a day. Thank you! 🙂
