Traditional Bottle Fermentation Techniques
Initially focused on Riesling, St. Laurentius has expanded its offerings to include Pinot Blanc, Pinot Noir, St. Laurent, Auxerrois, Elbling, and Chardonnay. The base wines are crafted from hand-picked, healthy grapes, which are gently pressed. The fermentation process occurs in stainless steel tanks, allowing for precise acidity management, particularly with Burgundy varieties. The Riesling undergoes biological acid degradation, followed by a second fermentation using classic methods. The winery exclusively uses champagne yeast imported from Champagne, contributing to the fine bubbles and distinctive flavor profile of their sparkling wines.
