Joseph uses instinct and experience to accomplish his mission of producing wines that reflect their distinct terroir. The wines showcase intense flavors and aromas as well as the sunshine of California summers.
Winemaking with Finesse and Elegance
Joseph Davis was interested in winemaking at a very young age. In 1984, he worked for Dan Lee of Morgan Winery and produced some award-winning wines. Davis implemented traditional French winemaking methods to create unique wines with finesse and elegance. At Arcadian Winery, the workers handpick the best grapes and delicately transport the fruits for further processing. Sorting takes place in the early hours of the morning to ensure cool, intact berries, they are then soaked in cool water to stop any premature fermentation. This practice maximizes color and tannin extraction from the skins of the grapes. Fermentation takes place in open-top, small wooden vats.
Grape Fermentation at the Winery
Grapes processing at Arcadian Winery begins with foot-treading to extract maximum color, tannin, and richness. The fermentation of their wines is completed in a mixture of new and old French oak barrels. The main grape varieties grown include Syrah, Pinot Noir, and Chardonnay. The best grapes are handpicked at Arcadian to make high-quality red, white, and rosé wines.
Arcadian Winery is one of the most prominent producers of Syrah, Pinot Noir, and Chardonnay in California.
