"Planting the right varieties in the right locations is essential. To create exceptional wines, you must cultivate excellent grapes. Nurture the grapes organically and intervene as little as possible in the winemaking process."

Jim Milone, the winemaker at Terra Sávia, has dedicated over 40 years to crafting wine from the vineyards of Sanel Valley. As a fourth-generation winegrower in Hopland, he follows in the footsteps of his great-grandfather, who established the area's first winery before Prohibition. Growing up in the family vineyards, Jim developed a deep appreciation for the land, which has only grown stronger over the years.

Minimizing Intervention in Winemaking

Jim's winemaking philosophy focuses on creating wines that reflect the unique characteristics of the grape, vineyard, and terroir. With decades of experience producing a diverse range of wines, he believes in investing effort in the vineyard while minimizing cellar intervention. "Winemaking begins with the first compost application in the fall and continues through winter pruning," he says. Every step of our wine production process, from pruning to bottling, is designed to reduce our environmental impact while enhancing the quality of our products.

Terra Savia, a vineyard that lives up to its name as an organic winery, and not only wines, they also produce different types of olive oils, creams and soaps, with a very particular decoration. You can do a tasting of different wines at a good price $$. Attended by its owners, it is worth visiting.

Absolutely loved everything about this place. Fantastic wine, fantastic olive oil and then add rescue animals and a plant nursery. The wonderful woman serving us was such a kind interesting woman I would return for her service alone. Would recommend checking out.

My wife and I stumbled upon this place on a short weekend getaway. We spent several hours there, talking with the caretaker, tasting their incredible wine selections (and neither of us particularly likes wine, so it was notable that we found several we really enjoyed) as well as their awesome olive oil selections. It's a family- and pet-friendly place which is huge, for us, as we typically travel with our two small dogs, so any place that allows them inside with a smile is at the top of our list of favorite places. The cherry on top of the wines, oils, soaps, teas and honeys is the animal sanctuary on the estate. We were provided a couple baskets of carrots, pears and apples to feed to the donkeys, sheep, goats, bull and even the chickens. We will absolutely be back and are already recommending it to friends and family.

Absolutely amazing experience with Monica today. She was more than happy to tell us all about the place and made us feel so welcome. Very dog friendly, had a blast with the olive oil and wine tasting, and got to pet and feed a bunch of different farm animals who are now living their best life.

We have stopped here a few times. We appreciate the fact this is an all organic winery. We enjoy the merlot and an olive oil infused with lemon. Lots of unique furniture made from wine barrels, an old Porsche, very friendly goats and a nice view of a near-by hill.
