Vallein Tercinier, Excellent Producer of Cognac

The winery started its work back in 1850 when George Vallein sold his first bottles of Cognac, and nowadays the family Vallein Tercinier still successfully runs the estate and the winery. Vallein Tercinier produces exceptional Pineaux and Cognacs. The estate composes of 6 Cognac vineyards and the vineyards with Grande Champagne, Fin Bois, Petite Champagne, Bons Bois, Borderies, and Bois Ordinaries. Grande Champagne has 13,159 hectares of vines. They produce white grapes, which produces fine and light Cognac requiring long aging. Fins Bois contains clay and chalky soils while Bons Bois have sandy soils. Borderies is the smallest vineyard and contains clay and flint stones.

The Winery Terroir and Production Stages

The vineyards cover an area of approximately 80,000 hectares. The white wine used in productiono of Cognac is very dry, thin, and acidic. It is excellent for distillation and aging. The wine should be at least 90% Ugni Blanc, Folle Blanche and Colombard. They left the juice to ferment for two or three weeks after the grapes are pressed. The wine produced is about 7% to 8% alcohol. The distillation process takes place in Charentais copper alembics stills. The final eau-de-vie is a colorless spirit of about 70% alcohol.
