Vallein Tercinier: A Legacy of Cognac Excellence
Founded in 1850 by George Vallein, Vallein Tercinier has been a family-run estate for generations. This winery is renowned for producing exceptional Pineaux and Cognacs. The estate features six vineyards located in the prestigious Cognac regions: Grande Champagne, Fin Bois, Petite Champagne, Bons Bois, Borderies, and Bois Ordinaire. Grande Champagne, with its 13,159 hectares, is known for its fine white grapes that yield light Cognac requiring extended aging. Each region contributes unique characteristics, from the clay and chalky soils of Fins Bois to the sandy soils of Bons Bois, and the clay and flint stones found in the smallest vineyard, Borderies.
The Terroir and Production Process
The vineyards span approximately 80,000 hectares, where the white wine used for Cognac production is dry, thin, and acidic—ideal for distillation and aging. The wine is primarily made from 90% Ugni Blanc, Folle Blanche, and Colombard grapes. After pressing, the juice ferments for two to three weeks, resulting in a wine with an alcohol content of 7% to 8%. Distillation occurs in traditional Charentais copper alembics, producing a colorless spirit with about 70% alcohol. The final product is aged in Limousin oak casks for a minimum of two years, allowing the flavors to develop.
