The diverse soils here, featuring clay-limestone and rocky subsoil, contribute to the unique character of their wines.

The winery primarily focuses on Merlot, Cabernet Franc, and Cabernet Sauvignon grapes. Vignobles Lavau is dedicated to aging their wines for several years, allowing them to develop rich flavors and complexity. With an average vine density of 3,000 to 5,000 per hectare, the vines are carefully managed through single and double cane pruning and debudding in spring. The winemaking team combines traditional methods with modern techniques to ensure high-quality wines that reflect the terroir.
