A Barbera with great aging potential, characterized by a ruby color and a bouquet of red fruit and vanilla. On the palate, it is rich, flavorful, and persistent.
The grapes are harvested in mid-September, the day varies according to the year and the degree of ripeness.
As soon as possible they are destemmed and fermentation and maceration in steel begins. When the sugars are exhausted, after about 10 days or more, it is drawn off and malolactic fermentation begins.
After a brief refinement in steel or cement, the wine is placed in wood, where it remains for 10/12 months until bottling.
- Color: ruby red with purple reflections, tending towards garnet with ageing.
- Nose: the bouquet recalls red fruit, strawberries, violets and vanilla, sometimes it presents smoky notes
- Palate: tasty and full-bodied with greater perception of acidity when young.
- Ideal pairings: stews, important meats, rich sauces or tasty cold cuts.
