Barbera d'Asti DOCG
A Barbera with a fragrant nose, with clear hints of cherry, strawberry and violet, characterised by a savoury sip and full of marked acidity, typical of the grape variety.
The grapes are harvested between the second and third week of September, on the day
varies according to the vintage and the degree of ripeness.
In the shortest time possible they are pressed and left to macerate in stainless steel tanks, in the meantime the fermentation process begins. In 10-12 days the
the transformation of sugars into alcohol is completed and we proceed with the racking, which
will be followed by malolactic fermentation in steel or cement , where Tantevi is refined for at least 6-9 months before being bottled in the summer.
- Color: ruby red with purple reflections that turn to garnet after a few years of aging.
- Nose: Intense aroma of stone fruits (cherry primarily), strawberry, violet, sometimes almond.
- Palate: full and savoury in the mouth, with a marked acidity and a light but clear tannicity that fades over the years.
- Ideal pairings: red and grilled meats, cured meats and cheeses, soups and game; prefers fatty and tasty foods.
