The grapes are harvested in mid-September, the day varies according to the year and the degree of ripeness. As soon as possible they are destemmed and fermentation and maceration in steel begins.
When the sugars have run out, after about 10 days or more, it is drawn off and malolactic fermentation begins. After a short refinement in steel or cement, the wine is placed in wood, where it remains for 10/12 months.
until bottling.
- Color: ruby red with purple reflections, tending towards garnet with ageing.
- Nose: red fruit, strawberries, violets and vanilla, sometimes with smoky notes.
- Palate: tasty and full-bodied with greater perception of acidity when young.
- Ideal pairings: wine designed to complement the tasting of fresh stuffed pasta, medium-aged cheeses or bagna caùda.
