Experience Biodynamic Winemaking in South West France

Crafting Wines with Passion

Since 2013, Laure and Pierre Fabre, a dedicated couple of winegrowers, have been revitalizing the rich winemaking traditions of the Gaillac region. Their estate has undergone significant transformation, including new plantings and the acquisition of historic vineyards from the former Château Moussens in 2018.

Rich Terroir

The limestone-rich Cordes plateau provides a unique mineral quality to the grapes, resulting in expressive artisanal wines. The estate, resembling a quaint hamlet, boasts a diverse ecosystem with oak and hazelnut trees, where local truffles thrive.

Since 2016, the estate has been cultivated using organic methods, transitioning to biodynamic practices in 2019. Spanning approximately 30 hectares, the vineyards include:

  • 8 hectares surrounding the family property in Capendut, situated at 300m above sea level, producing fresh white and rosé wines from shallow, stony soils.
  • 20 hectares in Cestayrol, 7 km away, featuring deeper clay-limestone hillsides that contribute complexity and richness to the red wines. These vineyards have been biodynamic since 2020.

Additionally, 60 hectares of forest and cereal land are in the process of conversion to organic farming.

Careful Vineyard Practices

Daily observation in the vineyard allows the vines to thrive in harmony with their environment. Practices include varied plant cover, natural fertilizers, and herbal preparations to nourish the soil and protect against pests. All vineyard work, from pruning to harvesting, is done manually, ensuring respect for the land.

In the Cellars

In the cellar, gravity is utilized to minimize pump usage, preserving the integrity of the grapes until pressing. Each vineyard plot is vinified separately, allowing for precise blending based on the unique qualities of each batch.

Fermentation relies on the natural yeasts found on grape skins, enhancing the wine's authentic expression of terroir. Sulfites are added judiciously, tailored to each vintage's needs. Wines are aged in concrete, stainless steel, amphora, or barrels, with most cuvées crafted from single varietals.

Local Grape Varieties

Laure and Pierre are committed to showcasing the unique ampelographic heritage of the Gaillac appellation. They focus on cultivating local grape varieties such as Braucol, Duras, Mauzac, Ondenc, and the rare white variety, Loin de l’œil, which contribute to the region's distinct identity.
