Haute-Serre Vineyard

The vineyard at Château de Haute-Serre boasts a rich history that dates back to the Middle Ages when it was owned by the Abbey of Lagarde Dieu in Tarn et Garonne. Originally covering nearly a thousand hectares, this estate has witnessed centuries of change and growth.

In 1580, a remarkable event occurred when a woman discovered the "Holy Headdress" of Christ, a significant relic that had been hidden in Cahors since the 12th century. Géron Dadine of Haute-Serre rescued this artifact from destruction, trading a bounty of wheat to secure its safety. On June 4, he secretly transported the relic to his estate, the renowned Château de Haute-Serre.

A Unique Vineyard in a Prime Region

Malbec, the signature grape of Cahors, is the star of this vineyard, making up about 70% of the region's blends. The vineyards are beautifully situated along the Lot River, benefiting from its gentle curves and hillsides, which create a favorable microclimate for grape growing. The region enjoys a balanced climate, with ideal rainfall and humidity levels that support the cultivation of high-quality vines.

Winemaking at Château de Haute-Serre

The wine cellar at Haute-Serre is strategically located at the heart of the estate, allowing for quick transport of freshly harvested grapes for vinification. Constructed from stone and topped with tiled roofing, the cellar is well-insulated, providing a cool environment in summer and a stable climate in winter.

In the winemaking process, grapes are swiftly transferred to stainless steel fermentation tanks, which are chosen for their cleanliness. As Georges Vigouroux often notes, the wine cellar must maintain pristine conditions, akin to a maternity ward. The facility has ample tanks for traditional vinification, producing robust wines that age well. After fermentation, the wines mature in 225-liter oak barrels and 75-hl casks for 12 months, enhancing their complexity and character.

Good evening, I wanted to thank the entire Château team for giving me a wonderful day today. It started as soon as I arrived at 11 a.m. thanks to the professionalism of Romain who gave me the guided tour and tasting. He knows his subject very well and as a result, it’s very enriching. Afterwards, I ate at the restaurant which was a 5/5. Both the cuisine which is refined, creative and tasty, but also the service thanks to the friendly sommelier Litu who took the time to explain to me these pairing choices and the explanation of each dish. Finally, a big thank you to Christine Vigouroux the owner who accompanied me to the truffle market in Lalbenque and then a practice of digging on her truffle oak land thanks to her 2 dogs. The welcome and service exceeded my expectations during this day. I highly recommend this place especially on Tuesday during the truffle festival. A thank you also to the director who took the time to come and greet me in the room and at the end. Looking forward to seeing you in Quebec!

We had dinner on the evening of August 14. The cuisine is very pleasant in a truly magnificent setting. The dishes are hearty without being excessive with a very nice balance between classic products and very inventive accompaniments. The cooking of meat and fish is perfectly mastered, the sommelier advised us taking into account our preferences and without pushing for consumption. But above all, a special congratulations to the pastry chef for his chocolate creation whose flavors and lightness were very appreciated at the end of the meal. An address to remember in the region for a quality/price ratio, in my opinion of a very good level.
