Commitment to Organic Farming
Since 2005, Château de Gaure has embraced organic farming, resulting in lower yields but higher quality wines. The estate maintains a yield of 15 to 25 hl/ha, allowing grapes to reach optimal maturity. Grapes are harvested in pristine condition and fermented using natural yeast. The vineyards are situated in two distinct regions, enriching their white wines with diverse soil characteristics. The Limoux region is particularly renowned for its exceptional Chardonnay, benefiting from the fresh climate of Languedoc and significant temperature variations between day and night.
