The history of the Château de Gaure traces back to prehistoric times of 1150, but the lastest owner – the Fabre family acquires the Château de Gaure in 2005. It is an estate in Languedoc Roussillon with 200 ha of land, which also has a castle in the middle of its territory. In 2006, the family acquired the second estate to find a true red terroir.
Turning to Organic Production
The winery works with organic farming since 2005, and the yields have reduced by higher quality. It found the balance between 15 and 25hl/ ha. These yields allow them to wait for beautiful maturities of the grapes. Then, they collect the grapes in a perfect sanitary condition by mutual harvesting and ferment the wines with natural yeast. The vineyards of the winery are located in two different regions and this diversity of the soils brings a real richness to their white wines. The Limoux region is known for the high quality of Chardonnay. The balance and freshness of the wine are because of the fresh climate of Languedoc and its significant daytime-night temperature differences.
