Since 2005, Château de Gaure has embraced organic farming, resulting in lower yields but higher quality wines. The estate maintains a yield of 15 to 25 hl/ha, allowing grapes to reach optimal maturity. Grapes are harvested in pristine condition and fermented using natural yeast. The vineyards are situated in two distinct regions, enriching their white wines with diverse soil characteristics. The Limoux region is particularly renowned for its exceptional Chardonnay, benefiting from the fresh climate of Languedoc and significant temperature variations between day and night.

Excellent visit and moment of sharing that we will remember for a long time! We had the chance to visit the places, the cellars and to taste very good wines. My partner and I and a couple of our friends visited this winery during a weekend trip to France. The property was absolutely beautiful, especially in the fall with all of the trees. Pierre was super welcoming, and we really liked how he included all of the history of the property, his family, and himself on the tour. It was definitely the most unique winery tour I have been to, and I mean that in the best way. It feels very personal, passionate, and intentional. His focus on truly organic wine growing is refreshing to learn about, and was the first time I felt that I learned something new or changed my perspective about wine. I was nervous to try this "truly organic" wine, but I was proven wrong. It was by far some of the best wine I have ever had, I enjoyed every tasting that they gave us. I will definitely be looking out for their brand, and will continue to buy from them however I can.

You can see the effort of a family trying to thrive on such a competitive world but without leaving their values of producing organic wines; their project above all. On top, labels of the wine bottles are made by the owner who is also an artist. Nice environment, nice people, good wine. What else? Thanks Pierre and Yana for opening your house to us.

We visited this winery on our way back from Saint-Hilaire FR to where we were staying in Carcassonne back in October of 2022. This quaint winery was picturesque, and the wine was delightful. The owners were knowledgeable and welcoming, showing us maps of the region and where their grapes grew. Prices were amazing compared to what we pay for in the states. We ended up leaving with quite a number of bottles we were thankful made it all the way home in our luggage. After a year, the Languadac vintage was just as vibrant and bold as we remembered. We will always think fondly of our visit here.
