Originally a medieval monastery in the 12th century, Château Ollieux evolved into an agro-pastoral domain in the 18th century under the influence of the nearby abbey of Fontfroide. Over the years, various families have contributed to the winery's rich history and terroir. In 1978, Jacqueline and François Bories took the reins, and by 1998, their children joined the family business with a shared goal of crafting authentic, natural wines. The spiritual essence of the winery is palpable, as you stroll through the lush vineyards where diverse grape varieties thrive, including Carignan, Grenache, Syrah, Mourvèdre, Roussanne, and Marsanne.
The Corbières terroir is renowned for producing distinctive red, white, and rosé wines. We had a marvelous experience discovering the basics of local what be making, looking over magnificent views of corbières country side. The wine tasting and the restaurant were great as well. Definitely recommend for anyone who is looking for an unforgettable experience. I'm sure I will be back

A restaurant located in the exceptional location of the Corbières massif, in the heart of a wine estate. Excellent value for money for tasty and generous cuisine made with local products. Many thanks to Arnaud and Yann for their welcome and their professionalism. I must point out that I had already started tasting my duck breast before taking the photo!

Relaxing atmosphere in the middle of the vineyards. Very pleasant lunch service. We enjoyed the menu offered at the restaurant. We will return to eat at the restaurant among the vineyards at the top of the estate to enjoy the view!
