Château Ollieux with Its Multifaceted History
. In the 12 th century, the winery was a medieval monastery. Later in the 18th century – under the influence of the abbey of Fontfroide – the monastery becomes an agro-pastoral domain. Over the years many large families followed one another and shaped the history and the terroir. In 1978, Jacqueline and François Bories took over the winery. In 1998, the children Jacqueline and François Bories joined the family business with a single ambition – to make sincere and natural wines. At Château Ollieux you can literally feel the sublime spiritual past of the winery. In these beautiful vineyards, the owner grows vines with diversity. They mainly grow Carignan, Grenache, Syrah, Mourvèdre, along with exceptional Roussanne and Marsanne.
