The beautiful Domaine Debray nestles in the heart of the Beaune region of Burgundy. Yvonnick Debray is a Breton of origin and accounting of formation. Passionate about wines, he settled in the Paris region for twenty years where he was a distributor of Burgundy wines at shows in France. In 2006, he decided to pack his bags in Burgundy and bought a vineyard. The estate has a wide range of wines. They belong to various appellations that include several 1er Crus and Grand Crus. The winery is popular for its classic Pinot noir and red varietal of Burgundy.
The domain produces high-quality wines with the utmost respect for the environment. They focus on picking the grapes manually and carefully sort them out before the winemaking process starts. They carry out the vinification process with careful monitoring. Fermentation and aging process takes place in oak barrel. The aging of regional appellations takes place in vats. On average, they age the wine for no more than 5 years. The alcoholic fermentation lasts for 4 to 6 weeks. The aging continues in barrels for about 12 months. It depends on the appellation and the vintage of the wine. Then, they glue and bottle the wine. Their classic red includes Pinot Noir and the Hautes Côtes de Beaune, the Aloxe Corton and the Côte de Nuits Villages.
