Today, it stands as a cornerstone of the Le Volpi and Monte Fasolo estates, which together span over 200 hectares, making it the largest private winemaking operation in the Euganean Hills. With 95 hectares dedicated to vineyards, each grape variety is carefully matched to its ideal environment, ensuring the production of exceptional wines. The meticulous approach to viticultural zoning considers soil, climate, and vine interaction, resulting in high-quality grapes that reflect the unique terroir of the region.

Tradition Meets Innovation in the Heart of the Euganean Hills

Monte Fasolo farm is rich in history and offers stunning panoramic views, making it a sought-after destination in the Euganean Hills. Since its acquisition in 2017, the estate has undergone significant renovations aimed at enhancing both the winery and its surroundings, with a strong focus on sustainable practices. All vineyards are in the process of being converted to organic farming, with certification expected by the 2023 grape harvest. Notably, the estate is dedicated to preserving the historic Carménère grape variety and is committed to the Classic Method of sparkling wine production, ensuring a blend of tradition and modern winemaking techniques.

Stopped here for lunch during a hike. Even though it was very busy, they still found a table for me. I tried the Sauvignon and the 18-month Cabernet. Both were very good. The salami & ham platter were also delicious. I will definitely be coming back here.

We chose the place for our company anniversary. Since we celebrated on Monday evening, the wine shop was completely reserved for us. We decided to celebrate in the barrel room: the place is fantastic, everyone was really surprised. Very good food and wine! We also used the upstairs room for a short speech by the owner and I must say that it is well organized, everyone liked that too! Excellent service, everyone very nice and helpful.

I had lunch with a friend on Sunday and as always, expectations were more than exceeded. The place is wonderful, unlike the last time when we had lunch inside the restaurant, in an intimate and pleasant atmosphere. The menu is varied and ranges from more traditional dishes to innovative dishes for the mountain region, even with fish options. Highly recommended, I can't wait to come back!
