Winery in the Heart of Valpolicella

La Botega di Carilius is a charming shop located in Bure, right in the heart of Valpolicella. This inviting space serves as a local hub for wine tasting experiences and leisurely moments, featuring a selection of unique wines and cocktails. The shop is an extension of the Carilius Wines label, known for its classic Valpolicella wines that boast an exceptional taste and intensity.

Historical and Precious Grapes at Carilius Winery

Carilius wines originate from the renowned wine-growing region of Valpolicella, where the exceptional Corvina Veronese, Corvinone, and Rondinella grapes thrive. These historical varieties are celebrated for their adaptability and vigor, flourishing in the region's poor, alluvial soils with a clayey-limestone composition. This unique terroir contributes to the wines' strikingly intense red color and delightful notes of cherry and jam.

Combination of Tradition and Modernity

At the helm of Carilius wines is Raffaella Cimadomo, whose passion for wine and deep connection to Valpolicella have shaped her approach. Raffaella aims to produce high-quality wines that blend tradition with modernity, communicating through a fresh and approachable style. Her artistic vision is reflected in the modern, clean label design of Carilius, named in homage to San Pietro in Cariano, the area that inspires her work.

The place is a little gem in the Valpolicella area. Excellent wines, some of which are real discoveries, paired with platters of typical cured meats and cheeses. Raffaella, with all the staff, is a delightful hostess. It is really worth stopping for a taste!!!!!
