The winery employs traditional appassimento techniques, using drying lofts to concentrate the rich flavors of the grapes. After harvesting the classic Valpolicella blend of Corvina, Rondinella, and Molinara, the grapes are laid out on bamboo racks, or Arele, for a minimum of 100 days. The estate produces two prestigious wines, Amarone and Recioto, both celebrated worldwide. Possessioni di Serego Alighieri boasts some of the oldest cellars in Valpolicella, where ancient winemaking traditions are still honored. The aroma of wine aging in 600-liter cherry wood barrels fills the cellar, enhancing the wines' smoothness and character.
