Located in the stunning volcanic landscape of Pantelleria, Abbazia San Giorgio was established in 2015 by Battista Belvisi, Beppe Fontana, and Pina Passarello. Starting with a modest production of just 4,000 bottles, the winery has expanded to produce around 20,000 bottles annually while remaining committed to its core values: respect for the land, passion for winemaking, and dedication to preserving the island's rich traditions. The vineyards, now covering approximately 7 hectares, are divided into small plots primarily situated on the sun-drenched southeastern slopes of Khamma, showcasing the unique terroir of Pantelleria.
Vinification and Biodynamic Agriculture
At the heart of Abbazia San Giorgio's offerings are the ancient Zibibbo vines, known for their golden clusters that thrive under the Mediterranean sun. Other grape varieties, including Catarratto, Nerello Mascalese, Pignatello, and Alicante, contribute to a diverse flavor profile. The winery practices biodynamic agriculture, avoiding chemical pesticides and fertilizers to maintain the land's natural balance. Instead, they utilize natural cover cropping for weed control, allowing the grapes to ripen slowly while absorbing the island's essence. In the cellar, indigenous yeasts facilitate fermentation without additives, resulting in wines that authentically reflect the soul of Pantelleria, delivering a vibrant array of flavors in every sip.
