Situated along the Guadalete River in the Bay of Cádiz, Bodega Gutiérrez Colosía has been crafting exceptional wines since 1838. The original cellar, established in that year, is still in operation today. In the early 20th century, José Gutiérrez Dosal, the family patriarch, acquired the winery. The unique climate, characterized by humid Poniente winds and dry Levante winds, provides ideal conditions for wine production. The winery employs the traditional Solera system, a time-honored method for aging and blending wines.

Biological Aging of Fino Sherry
The proximity to the Guadalete River is crucial for the biological aging of Fino Sherry. Utilizing the criaderas and soleras method, a layer of yeast known as flor forms over the wine, enhancing its flavor and aroma. It is a lesser-known winery but it has a history and quality of its wines that can be compared to the others. In our case we did a guided tour with a subsequent tasting with wine pairing in their Bespoke restaurant and it was a real treat. The visit with Inma was perfect, she explained to us step by step every detail of the winery and the production of each of their wines and their entire history and then she accompanied us to the tasting and in addition to explaining each dish and its corresponding wine she gave us advice and continued to answer each of our questions, it was very kind and gratifying to meet someone like that. Finally, I must also say that the restaurant staff also treated us like royalty and we felt very comfortable. Of course we couldn't leave without taking a bottle of their brilliant Fino, although the others were not far behind, I recommend it 100% and we will repeat with friends and family without a doubt.

A family-run winery with almost 200 years of history. Tours can include wine tastings and even wine pairings prepared by the neighboring restaurant. There's a counter at the entrance where you can purchase their products both by the bottle and in bulk. The lady working the counter provides excellent explanations.

Very good place for winery visit and wine tasting ! We went there with an appointment and were welcomed by a guide. She explained us in detail the history of this winery, it's owners and types of wines being aged there. This place is infact a historical winery. Wine tasting was super fun ! Every one visiting Puerto de Santa Maria should visit this winery. They also sell wines here and it's much cheaper than available in wine shops.

A fascinating opportunity to see how sherry is still made “the old way”. We arrived in Puerto Santa Maria after a 30 minutes ferry ride from Cadiz. We were just in time to take the 1 hour tour of the winery, which began at 2pm. Bodegas Gutiérrez Colosía is a boutique sherry producer that uses exactly the same methods that the same family has employed for nearly 200 years. This is not a huge corporation like Tio Pepe paying lip service to its past. There are no gleaming stainless steel tanks or technicians in white coats and hair nets here! Ima, from the winery, was a wonderful guide - her explanations were engaging, entertaining and of course extremely informative & knowledgeable. After she had explained the complex processes of sherry production, we were brought to “Bespoke”, the upmarket restaurant owned by the bodega, just a hundred meters away. Over the next hour, we were treated to a tasting menu of 6 exquisite tapas and paired with 6 different sherrys, from the bone-dry Fino to the syrupy Pedro Ximenez. The owner of the winery clearly has invested heavily in a great chef, to do justice his exquisite sherry. The food alone would be worth the trip over from Cadiz. The cost of the tour including the sherry tasting and food pairing was €33 per person, and to me was great value for money. The staff of the restaurant were lovely too. I highly recommend this if you are in Cadiz or the area.
