The winery employs the traditional Solera system, a time-honored method for aging and blending wines.
Biological Aging of Fino Sherry
The proximity to the Guadalete River is crucial for the biological aging of Fino Sherry. Utilizing the criaderas and soleras method, a layer of yeast known as flor forms over the wine, enhancing its flavor and aroma.
