At El Sueño De Las Alforjas, they minimize the use of modern innovations, opting instead for traditional methods. They utilize animals to till the soil and harness their manure through a composting system. The vineyard avoids insecticides, relying on natural repellents to enhance the plants' innate defenses.
Vineyards at 800 Meters
Located at an elevation of 800 meters, the vineyard cultivates two native grape varieties: Prieto Picudo and Albarín. Established in the early 2000s, this unique site features soils rich in dull, unpolished pebbles with low organic matter. The challenging climate, marked by harsh winters and unpredictable springs, ultimately gives way to the delightful aroma of ripe grapes in autumn.
Wine Matured in Caves
Situated in Valdevimbre, known as ‘Cima de los Ventanos’ (top of the windows), the winery is surrounded by numerous underground caves that have housed wines for centuries. The wine extraction process emphasizes gravity, reducing mechanical pumping to preserve the grapes' natural flavors and aromas. Wines mature in concrete tanks and French oak barrels, resting undisturbed in the cool, dark caves.
