Il Cancelliere – Winery Rediscovering the Historical Traditions
Il Cancelliere is situated in the middle of Montemarano, and the area is ideal for the creation of Taurasi DOCG wines. The family-run winery was set up by Soccorso Romano. His main aim while setting up the estate was to rediscover the historical traditions and use the fruits of the land to make quality wines. Soccorso uses his experience along with his son, Enrico’s agronomic knowledge, to run the winery. Soccorso learned the art of winemaking from his father and winemaker, Antonio di Grutolla. The wine cellar is in the estate and is surrounded by their vineyards.
Location of the Vineyards
The vineyards are present at an altitude of around 450 to 600 meters, between the Chianzano and Iampenne of the Montemarano area. Harvesting of the grapes takes place manually to protect the integrity and natural taste of the grapes. There is a lot of respect for the nature and the environment.
The winery does not use chemical fertilizers or additives in the vineyards or the wine cellar.
The vinification takes place in accordance with the traditions of their peasant culture.
Grapes and their Processing
The main grape variety that grows in their vineyards is the Aglianico that is used for making red wines. The best grapes are taken to the cellar for further vinification. In the cellar, they make use of old wooden barrels for ageing. This helps the wines to attain the perfect structure and have an intense fruity aroma. The wines perfectly represent the qualities of their terroir and their traditional winemaking skills and methods.
