La Bodega de las Estrellas is a charming family winery nestled in the heart of Castilla-La Mancha. Owned by Karina and Dionisio, this winery is dedicated to producing organic wines free from additives and sulfites. They cultivate their grapes using natural fertilizers, ensuring that each bottle reflects the pure essence of the land.
Situated on the southern edge of the Castillian Plateau, La Bodega de las Estrellas benefits from a unique soil composition of Mesozoic materials and soft sediments, which provide excellent drainage. The region enjoys sunny days that promote grape ripening, while cool nights enhance the wines' aromatic profiles. The winery primarily grows Tempranillo, Macabeo, Airen, Garnacha, Syrah, and Cabernet Sauvignon, with workers handpicking only the finest grapes for their red, white, and rosé wines.
Staying true to ancient winemaking traditions, La Bodega de las Estrellas utilizes clay amphorae for fermentation. These vessels contribute to the unique taste and aroma of the wines. The winery features a nine-meter deep cave that maintains optimal conditions for wine production. Additionally, wines are aged in traditional oak barrels and clay jars, enhancing their character.
The winery honors the rhythms of the cosmos, recognizing the connection between winemaking and celestial bodies. Harvesting, flowering, and ripening are timed according to the positions of the sun and stars, reflecting the practices of their ancestors. Write a reviewA small artisan organic wine producer based in the town of Valdepanas. Aitor the guide did an excellent job in explaining in English the full production process including the maturation process that takes place underground in a cellar hacked out a few centuries ago that houses ancient clay vessels, oak barrels and more. All their wines are natural with no added co2 or sulphates with timing based around the lunar calendar. The tour ended in tasting 5 wines with 3 small tapas. Best to contact the winery in advance to agree a time although I turned up early afternoon unannounced. A highly recommended 90 minute fun experience especially if you are not too familiar with the significance of grape colours, skins, vessel types and tasting.

A spectacular visit that we had the pleasure of enjoying in this place. In it you can see how the winemaking process was carried out 200 years ago. The wineries are spectacular and the barrels in which the wine is aged are amazing. After the visit and the explanations of the guide, the guy is a real phenomenon, you can enjoy a wonderful tasting of the different wines that you can buy there if you want.

We did this wine tasting because it was a special day with my partner, an excellent host, Aitor, who explained to us how the wine is made using the phase of the moon. In addition, it is a 100% organic wine, which is something you don't see lately, and the aromas and flavors are different, unique and pleasant. We leave with a pleasant experience and hope to return.
