Bodegas Calvente Winery lies on the southern edge of the Castillian Plateau. The soil comprises of Mesozoic material, soft sediments, and has excellent drainage. The days are usually sunny, which leads to the maturity of the wines while the cold nights add the characteristic aroma. The main varieties of grapes produced at Bodegas Calvente Winery are Tempranillo, Macabeo, Airen, Garnacha, Syrah, and Cabernet Sauvignon. Workers handpick the best quality grapes and make their famous red, white, and rosé wines.
The Winery uses Amphorae Vessels for Fermentation, Just Like Previous Generations
Bodegas Calvente Winery uses traditional amphorae vessels just like previous winemaking generations. The clay amphorae provide special fermentation and maturation of the wines giving them unique taste and aroma. There is a nine-meter deep cave which offers the best conditions and temperature for producing wine. The wine is kept in traditional oak barrels and also in clay jars.
The winery places a lot of emphasis on the rhythms of the cosmic bodies. There is a close link between winemaking and the sun, stars, and moon. Harvesting, flowering, and ripening of the wines are done in accordance with the positioning of the sun and stars, carryin forward the work and ideas of their ancestors.
