For over a decade, Cantina Fongoli has embraced natural winemaking, eliminating machinery in favor of sustainable practices. The soil is enriched with legumes to boost humus levels, while tall trees and herbs are planted among the vines to enhance grape quality. During harvest, only the finest grapes are handpicked and transported to the cellar for processing.

The winery cultivates a diverse range of grapes, including the aromatic Grechetto, Trebbiano Spoletino, and Sangiovese, along with premium Sagrantino, Merlot, and Montepulciano from the Montefalco Sagrantino DOCG region.
