Biodynamic Wine Production at Cantina Fongoli
Cantina Fongoli Winery is situated between the two narrow streets, upright to Via Mazzini, in San Francesco, in Umbria. The arable land located over an area of 35 hectares, cultivated with biodynamic practices to produce delicious organic wines. With extreme care and attention, the owner uses traditional methods in the vineyards, surrounded by olive groves, truffle-ground, and wood.
The Winery Follows Natural Methods of Winemaking
From the past ten years, the company has abandoned all the machines and completely indulged in fully integrated natural methods. The quality of the soil has also been enhanced with legumes for the green manure to increase the humus. Within the rows of vineyards, they have planted tall trees and herbs to make the grapes fructiferous. During the harvesting season, only the best bunches are handpicked and moved to the cellar for further processing.
Animals Increase the Biodiversity in the Vines of Cantina Fongoli
Fongoli winery produces a vast array of grapes, including fragrant Grechetto, Trebbiano Spoletino, and Sangiovese. The estate is also a certified grower of top-notch Sagrantino, Merlot, and Montepulciano vines, within the Montefalco Sagrantino DOCG region. At the winery, they only use the grapes grown in their vineyards to produce rich-quality red and white wines, together with outstanding dessert and sparkling wines. Moreover, the olive groves are open to farm animals, such as horses, goats, and cows so that they can eat up all the weed, thus, increasing the biodiversity of the region. All the DOC, DOCG, and IGT are aged in a conventional way using ancient Oak Slavonian barrels, placed in the cellar. The position of the cellar at Cantina Fongoli, near the vineyards, offers appropriate conditions for wines to become refined.
