The Domaine Vents du Sud estate was created in 2006 with the acquisition of Mas and the various parcels that make up the vineyard. The approach has always been one of a quality approach. The diversity in a spirit of wine production maximizes terroirs and exhibitions while remaining as natural as possible.
The variety of plots and grape varieties allows developing a range of eight wines. The frequent tasting of the grape variety and parcel before the harvest enables obtaining a qualitative phenolic maturity. At the same time, it remains as close as possible to the natural elements. From 6 varieties, which they grow, they produce totally natural wines. Those wines are made with indigenous and they have no added sulfur. Only this way, they can truly mirror their origin.
They pick all the grapes manually in the cool of the morning. Then, they transport them in crates to preserve the integrity and quality of the grapes. The vinification begins with maceration of cold skin. The control of the temperature regulates the duration of these pre-fermentation carbonic macerations. This releases the aromas of the musts as much as possible. Pressings and manipulations of the wine are done gently in respect of this product. They make the farms in vats or French oak barrels from 1 to 3 years old. Bottling is done paying particular attention to the field to obtain a high-quality product.
