Winery focusing on Metodo Classico

Ventiventi is a new winery in the province of Modena, a land of food and wine excellences. We are a 100% family-based business built on the dream of the Razzaboni’s family

Our nwinery is located exactly in the middle of 45 hectares of land, 30 of which are vineyards.
For us, cultivating native vine varieties, like the Lambrusco of Sorbara, the Lambrusco Salamino di Santa Croce and the Pignoletto, is key. However, we have also introduced some international vine varieties famous in sparkling-wine making.

For the production of all of our sparkling wines we follow the Traditional Method, which involvesa first fermentation in steel tanks, a long refinement process, and then a second fermentation in the bottle, which is followed by 24 months of refinement. This method allows us to obtain
elegant and fine sparkling wines, which stand out for the freshness and minerality given by the clayey soils.

We have the organic certificate since the harvest of 2019.

Pursuing our idea of organic farming and sustainability, we have installed 52 Kw of photovoltaic panels; in the vineyard, we have a drip irrigation system that reduces waste, and we use a recovery machine for treatments on plants which allows us to recover between 40% and 90% of copper or natural treatments that we use, so that they are not dispersed in the soil or in the air.
From the very first day we have a mission: offer high-quality products with good minerality, wholesomeness and clean appearance.

In order to be healthy, the organic certificate is important, but it is even more important that a wine is poor in sulfites. The quantity of sulfites in all our wines is lower than 50 mg per liter, which means that we produce very light wines that won’t give you a headache the next day!
With the first harvest we produced 25 thousand bottles, with the second harvest 30 thousand, and in the last year we produced 70 thousand bottles.

The team that runs the winery is very young, the average age is 26 years. We want to grow together to improve our products.
