Fabien Demois, who took over the family estate in Chinon in 2008, cultivates 24 hectares of vineyards. His passion for viticulture and oenology shines through in his small cuvée, crafted from half a hectare of old vines and aged in barrels for a year.

The wines produced by Fabien are known for their sincerity and authenticity. Committed to biodynamic practices since 2015, he views the vineyard as an ecosystem that thrives on natural processes. The estate utilizes horse manure from the Chezelet stable as a natural fertilizer, enhancing the health of the vines.
Respect for Nature and Biodiversity
Fabien prioritizes the natural rhythms of the vineyard. In winter, sheep graze among the vines, promoting soil health. He carefully manages the land to protect biodiversity, sowing a variety of grasses like barley, radishes, and clover between the rows to enrich the soil. All harvests are done by hand, ensuring quality and care. The wines are vinified in concrete vats without rush, allowing for a true expression of Chinon's terroir. Each plot is treated individually, resulting in unique cuvées that reflect the estate's commitment to quality and sustainability.
