The rossese grapes of our company and the pinot noir grapes are harvested manually in boxes in mid-September. Vinification: the wine is obtained from the flower must of “Rossese” grapes and from Pinot Noir grapes, both vinified in white; the wine is then sent for the second fermentation according to the Martinotti method. Description : Color Brilliant to the eye, pale pink with a fine and persistent foam. Bouquet: olfactory impact of rose and fresh grass, with clear hints of strawberry and cherry. Taste: The bubbles caress the palate and give way to a good freshness and flavor. The finish is persistent and balanced. Ideal period of consumption: Due to its characteristics of freshness, it is released for consumption a short time after bottling, but offers its best qualities in the three years following bottling. Food matches: It is recommended to serve cold at 8 – 10 degrees. To be enjoyed throughout the meal with land and sea dishes.
