When we think about Andalusian wines, the first thing that pops in our mind is Sherry. Andalusia is, in fact, home to this world-famous fortified wine. Most of them are produced with the fermentation of white wine (from the Palomino grape), and exhibiting nutty and dried fruity flavour. It imparts the aromas of sweet sultans and raisins with a hint of sweet liquorice smell. Most Sherries are dry and present aromas of umami.
There are several categories of Sherry: Fino, Manzanilla, Amantillado, Palo Cortado, Oloroso, Pedro Ximénez and Cream.
