Azienda Agricola COS was founded in 1980, marking the beginning of a passionate commitment to crafting exceptional wines. Our philosophy centers on selecting the finest soil, grape varieties, and vineyard practices. We believe that wine should reflect the land, the vineyard, and the culture, creating a true expression of our Sicilian heritage.

Rooted in Ancient Soil

Located in the southeastern corner of Sicily, our winery benefits from a unique climate and rich history. The landscape is adorned with vineyards, olive trees, and almond groves, all basking in the warm Mediterranean sun. This ancient land holds stories of its past, with remnants of Greek coins and early Italian pottery waiting just beneath the surface.

Organic and Biodynamic Practices

The Vittoria region, where we are situated, features limestone-rich soils topped with red clay, providing a perfect balance for grape growing. Our founder, Giusto, views the vineyard as a vital asset that must be nurtured. Since our inception, we have adhered to organic and biodynamic practices, avoiding synthetic chemicals to maintain soil health. We became certified organic in 2007 and have been pioneers in biodynamic viticulture since 2000. The warm, dry climate of Vittoria is ideal for these sustainable methods.

To ensure the purity of our wines, we utilize a variety of aging vessels, including 440-liter clay amphorae from Spain, large neutral botti, and concrete tanks. This approach allows us to minimize the influence of wood on the wine while enhancing its natural characteristics. We also practice extended skin contact for many of our wines, which helps develop natural preservatives, allowing for minimal sulfur additions at bottling.
