Growing Verdejo and Pedro Ximenez Grape in their Vineyards

In the late nineties, the core values of the winery changed with a transition to organic viticulture and the use of native yeasts for their winemaking. The owner of Bodegas Roble worked with national and international agencies and universities to learn organic practices that were adopted into the Robles vineyards when becoming fully organic. They grow Verdejo and Pedro Ximenez grape varieties to make their wines. The vines are very well maintained to ensure the quality of the fruit creating incredible wines. The wines are made by using the native grape varieties for the production of both white and fortified wines in the cellar. The owners are extremely conscious about the impact the vineyard and the cellar have on the environment and thus have tried to decrease the carbon footprint every year.
